Recipe: Welcome Spring with Sunshine Lemon Squares!

Need a little breath of spring to shake those winter doldrums? Look no farther than this recipe for the best lemon squares you will ever taste. They’re like sunshine in every bite!

Sunshine Lemon Squares
Ingredients:
Crust:
2 cups flour
1 cup (2 sticks) butter, softened
½ cup powdered sugar

Lemon Filling:
4 eggs
2 cups sugar
4 Tbsp. lemon juice
1 tsp. baking powder
½ tsp. salt

Mix crust ingredients thoroughly. Press mixture evenly into a 9 x 13 pan. Bake at 350 degrees for 20 minutes.
While crust is in oven, mix lemon filling mixture. Pour onto the hot crust, bake for another 20-25 minutes, until slightly golden brown on top.

Let cool and sprinkle with powdered sugar. Refrigerate at least 20 minutes before cutting and serving. Enjoy!
