doldrums? Look no farther than this recipe for the best lemon squares you will
ever taste. They’re like sunshine in every bite!
Ingredients:
Crust:
2 cups flour
1 cup (2 sticks) butter, softened
½ cup powdered sugar
Lemon Filling:
4 eggs
2 cups sugar
4 Tbsp. lemon juice
1 tsp. baking powder
½ tsp. salt
Mix crust ingredients thoroughly. Press mixture evenly into
a 9 x 13 pan. Bake at 350 degrees for 20 minutes.
While crust is in oven, mix lemon filling mixture. Pour onto
the hot crust, bake for another 20-25 minutes, until slightly golden brown on
top.
Let cool and sprinkle with powdered sugar. Refrigerate at
least 20 minutes before cutting and serving. Enjoy!
